Guyot-pruned

Vinification and ageing

Gentle pneumatic pressing of grapes, fermentation in tanks for four weeks at 18°C.

Bottling with prise de mousse six months after the harvest.

Bottle fermentation for 30-40 months on lees.

Serve at 5-6°C
